Duchess pairs a Brazil and Colombia lot for a layered espresso with a rich chocolate base and a pronounced orange sweetness. The creamy body and soft acidity give it an elegant balance, with a smooth, lasting finish. Duchess is ideal for those wanting a refined espresso with a touch of fruit, great on its own or with milk.

 

Duchess combines lots from our longtime partners Gabriel Nunes (Brazil) and Santa Maria (Colombia). Fazenda Nunes is located in the renowned Cerrado Mineiro region. We’ve known Gabriel Nunes since 2023 and built a trusted partnership. Gabriel’s commitment to quality, sustainability, and innovation is evident across the 600-hectare farm, where over 25 Arabica varieties are grown and fully sun-dried—a rarity in Brazil. Known for its mellow, chocolate-driven profile, his coffee reflects the farm’s specialty focus and dedication, recognized by multiple awards, including a CoE win in 2017.

The Colombian component of Duchess is sourced from five small producers in Santa Maria, Huila. This coffee is processed by Yonatan of Cuatro Vientos, our trusted partner for Colombia specialty microlots. Huila’s high altitudes and rich Andean terroir lend unique character to these coffees. Handpicked and washed, this lot offers a silky body, vibrant orange sweetness, mild acidity and a delicate finish.

 

Brew Instructions:

Prep Use a scale to measure your dose and yield (= brewed liquid). Use soft water (100-150ppm).
Step 1 Grind 18g of coffee at a fine espresso setting
Step 2 Distribute the coffee evenly in your portafilter and tamp level.
Step 3 Lock in the portafilter, gentle but firm. Don’t crack the coffee bed.
Step 4 Start the machine. Measure 40g of brewed liquid in your cup in 29 seconds.
Step 5 If the coffee runs too fast, grind finer. If the coffee runs too slow, grind coarser.
